Award-winning chef Akira Back's menu blends traditional Japanese cuisine with innovative flair. Signature dishes include big eye tuna pizza with shiso, an aromatic mint-like herb popular in Japan and Maine lobster carpaccio with sweet onion and cilantro. The atmosphere in the restaurant is very modern and has gorgeous views of the Bellagio fountains. I was impressed with the selection of cold sakes, however, hot sake fans will have to look elsewhere. My wife enjoyed her pomegranate martini.
They also offer some very interesting sushi rolls. You've got to try the crab and asparagus roll with pop rocks!

I have never left a place still hungry after dropping $200 on a meal. This place does not live up to the hype. The food and service is mediorce at best.

Let me just say I think I am being more than generous by giving it one star. This was the WORST, absolute WORST, and for those of you who are just skimming and may have missed it... THE WORST PLACE EVER! Overpriced Garbage! I made reservations at Yellowtail for my husband's birthday. He loves sushi and could eat it for breakfast, lunch, and dinner. Even though we had reservations, we still had to wait 20 minutes to be seated and the place was not that busy. No big deal there...it happens...sometimes you have to wait. Then there was the food. Becca F. was right in her review..."sushi chefs everywhere are embarrassed". We order the 7 course chef's tasting menu. After each course I was hoping and praying it would get better. I kept thinking...How could it get any worse? I was wrong every single time. Then we finally got to the dessert and it was bad! How do you screw up dessert? Even the service left lots to be desired. Since we had 7 courses we often watched our next courses take a couple laps around the restaurant before it made it to our table. A few waiters that didn't know their table numbers I suppose. No big deal, until the ice cream was practically completely melted on the dessert by the time it came to our table. The ONLY thing that was good about this meal was the Sapporo and we all know Yellowtail had nothing to do with that. I have been reading a lot of the other reviews on this sight and I wish I would have read them before I went. Here's the kicker for those of you that are still reading...After dropping almost $400 on this crappy birthday dinner we went directly from the restaurant to Taco Bell. My husband didn't eat any Taco Bell because he was full from eating my meal and his meal at the restaurant because he didn't want to waste it at those prices. Now the next morning, as I type this review, my husband is having a hard time trying to decide which end to put on the toilet first because he is as sick as dog from that horrible, horrible horrible excuse for fine dining/sushi. Appearantly, it wasn't even sushi...it was just bad old fish. Taco Bell never sounded so good!
