In Short – This intimate second-floor restaurant features vibrant ocean murals, crystal glass separating each room and light woods that look like they came directly from a yacht. A mixture of linen-covered tables and half-moon leather booths fill the dining room floor, while the adjoining lounge features an L-shaped mahogany bar that's ideal for pre-dinner cocktails. Fresh seafood choices range from fork-tender yellow fin tuna dashed with Moroccan spices to wild mushroom-crusted halibut.

This was my first time staying at Mandalay Bay. It is a tradition of mine to scope out all the upscale restaurants at the new place I will be staying and pick out one to try. I was certainly not disappointed with RM Seafood. Our reservations were for an early time, so we had no problems being seated right away. In fact, there was only one other couple dining in the restaurant. It made me a little hesitant, but the service and food that followed set my mind at ease. Besides, by the time we left 2 hours later, the place was packed.
Anyway, I cannot say enough good things about the staff. My date was my mom, and being from a foreign country, it was difficult for her to communicate with the staff. However, everyone was very patient with her - something I truly appreciate since I have experienced countless rude waiters in the past. The appetizer, a tuna tartare, was excellent, as was the bread that came with a phenomenal spread. Our actual meals were great. My short ribs were a teany bit dry, but my mom's sea bass with lobster ravioli (one of their specials) was delicious! We ended the meal with a sorbet trio that was sufficiently light enough for us to enjoy without being overly stuffed.
My only wish would be for this fabulous restaurant to be moer centrally located. It's tucked away in the corridor between Mandalay and Luxor. With its outstanding service and equally impressive food, I would think it would be displayed on their "restaurant row" (where Aureole and rumjungle are).

In a town full of very well publicized great restaurants with very well known chefs, we also like to try the not so marketed spots to see what they can put out.
RM surprised us with a very good sushi dining experience.
The sushi chef was very interested in what we wanted and listened to our requests. he also made some sugestions which all turned out to be delicious.
Our group tried several of their soups and they were fantastic. The miso was incredibly hearty and a bit creative.
Some of my friends had offerings from the pasta portion of the menu, which I found them to be nuts to do since this is a seafood restaurant. They wish they had listened because their pasta dishes were average at best, but hey you don't go to a steak house or Italian restaurant and order sushi now do you.
The staff and service were very attentive and not pushy, which many restaurants in LV are - trying to upsell you on everything at every moment.
The overall design of the spot is clean, but I'm not in love with the erector set metal vibe they have accomplished.
I'll be back and be back soon - for the sushi and service.

Visit the first floor r bar cafe for a more casual, less-expensive lunch or dinner alternative.

Order your appetizer and entree at the same time. Entrees take time to prepare and will ensure a much quicker dining experience if orders are placed together.
