In Short – The restaurant's focal point is its clubby lounge, cherished by the trendsetting crowd of regulars and business travelers. The environment is inviting, with plush leather chairs and couches, beige-colored walls and dim lighting. The dining room follows suit with an understated elegance captured by a distinctively European-influenced decor. The menu is an intriguing blend of cutting-edge sophistication and Old World style. Meals can be complemented with tannic cabernets from the enormous list of bottles.

Ate at Charlie Palmer Steakhouse, located in the Four Seasons Las Vegas (connected to Mandalay Bay, but surprisingly secluded, given that it is just off the strip). I've eaten at a number of steakhouses in Vegas - if you are going to eat a steak in Vegas, this is the place. It's rather upscale - not jacket and tie fancy, but you probably wouldn't fit in wearing jeans - but the service is superb, and the steak was frankly probably the best steak I've ever eaten - better than Morton's, Ruth's Chris, Tony Roma's, etc.
We started off with Ahi Tuna TarTar which was prepared exquisitely, which made for a very nice presentation. The sauce was great, but they could have given us more Lavosh.
On to the steaks - I got a 16oz NY Strip, my girlfriend got a Filet Mignon. I ordered medium rare, and they nailed it. Thick, juicy, and flavorful. Crispy with a slight searing on the outside, juicy on the inside. They do charge for a lot of little things (including Sauces and Sides5), but all in all, considering the classy setting, excellent service, and thick, delicious steak, the damage was a reasonable $150 after tax between the two of us (we refrained from the wine, which was upwards of at least $20 a glass). We actually had enough left over to take home, which we sliced up and ate as a cold medium-rare Carpaccio for lunch the next day. I'd recommend skipping the sauces, which are unnecessary and actually detract from the flavors of the steak. I've eaten at "The Steakhouse" located in Circus Circus, which also gets good reviews, as well as Wolfgang Puck's CUT Las Vegas, but they weren't in the same league as Charlie Palmer.
I definitely hope to go back when I get the chance.

CP Steak is my favorite Las Vegas steakhouse. Service is low key and professional. All starters,entrees,and desserts are exquisitely prepared and expertly presented.The 20 oz ribeye is awesome as is the three cheese gratin.Excellent wine selection as well. Worth the price.
Bad Food and Wine Experience

Charlie Palmer's was recommended to us so we decided to try it. Big mistake! I would say that the ambiance was quite nice and the bartendar, Bo, provided outstanding service and drinks. However, it is downhill from that point on. We were helped by the assistant Sommelier who knew next to nothing about wine. We selected a bottle only to be told they were out of that one. The Sommelier then arrived and produced a suggested alternative. Their wine presentation consists of them opeing the bottle in the back room and tasting it there before bringing the opened bottle to the table - talk about your lack of class. Our rib eye steaks were average and cooked to order. Our wives ordered the pork tenderloin which turned out to be indedible. Neither one of could cut through the pork because it was so tough. We sent it back to the kitchen and it was returned sliced. This did not help since they could not chew the pork. The restaurants response to this was to bring us additional side orders. Charlie Palmer's is terribly overrated. If you have to go here, go just for the drinks and then eat somewhere else.
